Independent Processor editor-in-chief Sam Gazdziak attended the 2016 American Cured Meat Championships in Omaha, Neb. to talk to the judges and contestants.

Sailer’s Food Market & Meat Processing won the Clarence Knebel Memorial Award, which honors the “Best of the Best” from the award-winning products entered in the annual American Cured Meat Championships.

Dewig Meats won the Cured Meats Excellence Award, which recognizes the processor that competed the best through the entire competition, at the 2016 American Cured Meat Championships.

The American Association of Meat Processor’s annual convention was so popular, even Abraham Lincoln turned up. The former president, or someone who looked very much like him, was on hand to cut the ribbon for this year’s convention in Springfield, Ill.

The Home of Lincoln will become the Home of Hams, Sausages and other delicious cured meats.
