WASHINGTON – Paradise Locker meats of Trimble, Mo. is voluntarily recalling about 120 pounds of fresh cattle heads that may contain prohibited materials.

The Food Safety and Inspection Service (FSIS) said Thursday that the heads did not have the tonsils completely removed, which violates regulations that require they be removed from cattle of all ages. The tonsils are considered a specified risk material (SRM).

The agency said that boxes of “BEEF HEAD, PARADISE LOCKER MEATS.” Each shipping package bears the establishment numbers “EST. 31865” inside the U.S. Department of Agriculture (USDA) mark of inspection are subject to recall.

These products were sent to retail establishments and restaurants in the Kansas City, Kan., area, the FSIS said.

The agency said the problem was discovered through routine FSIS inspection that verified there had been incomplete removal of the tonsils by the recalling establishment.
