A New York company is opening a shuttered meat plant in Lockney, Texas, and the new company will create about 20 jobs. Lubbock Online reports that Gold Medal Packing will process dairy bull calves, goats and lambs at GM Western Packing, its soon-to-open Lockney facility. The Rome, New York-based company is renovating the former Lockney Meat Company.

“GM Western Packing will use the latest technology and industry best practices in food safety and humane handling,” Vice President Joe Rocco Jr. said in a news release. “Using the model of operational excellence from our New York plant will enable us to fill a niche in the West Texas/New Mexico area, adding value to underutilized dairy bull calves.”

Management expects that the plant, opening this week, will expand within the next two years to about 50 workers. The plant will slaughter bob calves for veal, hides and organs.
